Now, back to the salad

Okay, I’ve been wanting to make a flavorful, loaded chopped salad for quite some time now and this one literally checks all of the boxes. We’ve got:

  • Veggies: the base of the salad packs the crunch with kale and red cabbage (my fav). You’ll also mix in creamy avocado, tomatoes, and pickled red onion.
  • Pasta: because 2024 is the year of adding pasta to salads – I don’t make the rules! I love using ditalini, but you can use any short pasta you’d like (even gluten-free pasta).
  • Chicken: grill or bake your chicken after marinating it in that delicious tahini honey mustard dressing.
  • Bacon: we’re getting extra savory with crispy chopped bacon.
  • Dressing: you’ll reserve some of the honey mustard dressing to, obviously, dress the salad, too! So good.

Can I make it vegetarian?

Absolutely! In fact, both the recipes in my cookbook AND in the preorder bonus pack include a “make it your way” section with plenty of ways to customize the recipes to your preferences.

In this salad, feel free to omit the chicken and bacon and toss everything with a can of rinsed, drained chickpeas instead.
